Ceylon cinnamon differs from regular cassia cinnamon in its more delicate taste and smell, but the uses are the same.
The Ceylon cinnamon tree is native to the island of Ceylon. Ceylon cinnamon has a sweet, slightly acrid flavour and a subtle aroma. Another well-known species is the Chinese cinnamon tree, or cassia, which originates from southern China. Compared to Ceylon cinnamon, this cinnamon has a much sharper and more pungent flavour, but a sweeter aroma.
