The mixture is piquant and delicious thanks to the harmonious combination of spiciness (pepper), savoury paprika and oriental flavours such as cumin, cinnamon and cardamom.
The spice is traditionally fried in butter and is mainly used in lamb and rice dishes. It also adds a spicy oriental flavour to other meat dishes such as minced meat, stews and poultry, as well as fish, vegetable dishes, couscous, pulses or potatoes.
