Pectin is a polysaccharide (chemical compound) that some plants contain. It is particularly abundant in fruits and seaweeds. In the food industry, this additive is actively used as a thickener in gelling products. Marmalade, marshmallows, condensed milk, jelly, jellies - all these treats contain pectic substances.
Nowadays, apple pectin, which is the most useful and highest quality, is particularly well known. In widespread use, this product is produced in two forms.
Tekstuurilt sarnane zelatiinile, läbipaistev, veidi rohkem kleepuvam.
Pektiini tarretumiseks on kolm tingimust: on tarvis orgaanilisi happeid, suhkrut ning kuumutamist (3-5 minutit).
30 grammi pektiini on piisav, et valmistada ligikaudu 3 kg moosi.
Kasutamine: kuumuta 0,5l vedelikku u 80C-ni, lisa pektiin pidevalt segades, kuumuta u 2 min kuni pektiin on segunenud. Lase jahedas tarretuda. Tükki minemist aitab vältida eelnev kuiva pektiini segamine suhkruga ja alles siis vedelikuga.
Ingredients: apple pectin E440, sodium citrate E331, dextrose.
