Hyssop is a spice, medicinal and beauty plant.
It is grown as a flavouring, ornamental and medicinal plant. In Estonia, hyssop is not well known as a herb, but it can be added to all meat, fish and vegetable dishes.
Widely used in the canning, meat and fish industries, it is also known as a spice for liqueurs and wines.
The sharp taste of Iisop improves the flavour of fatty foods, but it should be used with caution. Consequently, iisop is an indispensable flavouring in fish marinades.
As a herbaceous plant yields 40-60 kg/ha
The plant is rich in tannins, pigments, glucosides, bitter substances, flavonoids, organic acids and vitamin C compounds.
