The leaves of the Indian herb, fenugreek (methi, kasuri mehti, kasoori methi, fenugreek) have been part of traditional curries since ancient times.
Dried leaves have a more concentrated flavour than fresh leaves, so a smaller amount of herb is sufficient to flavour the dish.
The taste is slightly reminiscent of fenugreek leaves, a mixture of fennel and SELLERI, with a slightly bitter tinge.

It is used in vegetable and potato dishes, in tea making, rice, muffins, sauces, casseroles, soups, etc., and works well alongside strong flavours such as cumin, paprika and coriander.
